This worked for me as well - thank you Tim I'm also guessing as said above that an add on was allowing Outlook to try and download something externally and getting blocked by proxy, didn't try bringing down the proxy but I reckon this might have sorted it. It still retained the signature (I'm guessing from what was already stored on the email) but didn't attempt to download anything on an external server which is what I think was getting blocked and why it was just crashing/hanging. After applying these settings, outlook asked if he wanted to download pictures when he tried to forward it I put a tick in remember my answer and then hit no. When the user opened the email, nothing happened (As usual), the issue usually occurred when he tried to forward or reply to the email.

I also went into File - Options - Trust Center - Trust Center Settings - Automatic Download then ticked Don't download pictures automatically in HTML e-mail messages or RSS items and took the tick out of the top option. Not sure if you've sorted this yet Anthony, I went to File - Options - Mail then changed Compose messages in this format to Plain text instead of HTML.
